The south of Crete is very different from the north. You won't find the large number of mega resorts or large cities. In fact it is more like each area is like its own Greek Island with most hotels being small, family owned, and a much lower key tourism than the mass tourism of the north coast. That is not to say it is not touristic. Hippy artist havens like Matala and Agia Galini have become somewhat commercialized but not so much that Joni Mitchell would not recognize it were she to return. But compared to the way the north coast has been built up the south retains more of its traditional Cretan character. You can find accommodations in small coastal villages and that you may have entirely to yourself, or on mountaintops where you have a view that goes for miles.
